Raspberry custard tart by Oxana

Ingredients:

Sweet Tart Pastry:

1 1/4 cups (180 g) all-purpose (plain) flour

1/2 cup (75 g) icing sugar  –

2 ounces (100 g) cold unsalted butter –

1 large egg yolk  –

2 tBsp iced water 

Filling:

2 cups (500 ml) milk

1 tsp cinnamon powder

2 large egg yolks

1/4 cup (50 g) sugar

2 tBsp cornstarch (cornflour)

2 tsp butter

1 cup raspberries or other berries 

Preparation:

Place all ingredients in a food processor and pulse until the dough comes together. Cover the dough with plastic wrap (cling film) and refrigerate for 3O minutes. Lightly grease a 10-inch (25-cm) tart pan with a removable base.

Line tart pan with pastry & cover with parchment paper – fill with weights (like dry beans or chickpeas) and bake for 15 min at 180°C.. Remove the paper & beans & set aside.

Filling:

Combine the milk and cinnamon powder in a small saucepan over medium heat and bring to a boil. Decrease the heat to low, cover, and simmer for 15 minutes.

Whisk the egg yolks, sugar, and cornstarch in a medium bowl until combined. Gradually pour in the strained milk, stirring with a wooden spoon until incorporated, stirring continuously, until thickened. Remove from the heat, stir in the butter, and set aside to cool a little.

Pour the custard into the prepared tart shell and sprinkle with the raspberries or other berries. Bake for 15 minutes at 180°C. Stay home, cook & eat more!

Honey madeleine

Ingredients:

125 g of melted butter

3 eggs

130 g of sugar

1 tablespoon of honey

150 g of flour

1/2 sachet of baking powder

1 lemon

a pinch of salt

Preparation:

Turn on the oven thermostat 200 deg

Whisk the eggs, sugar and honey by hand until the mixture turns white.  

Then add the flour, salt, baking powder, melted butter and lemon zest.  

Mix well.  

Butter the molds and fill them halfway with the preparation.  

After you put them in the oven change the temperature to 170 deg cel.. Bake for 7 to 10 min, until the madeleines are golden.

It is really going fast stay with them while baking!

Orange and spice cake

Ingredients: for 6

4 eggs

200 g sugar

1 tsp. ginger and cinnamon mix (optional)

2 oranges or 3 lemons

220 g flour

1 sachet baking powder

8 cl oil

100 g butter

Instructions:

Preheat the oven to 180 ° C.

In a whisking bowl, mix the eggs with the sugar with a mixer or a wisk.

Add the spices mixture.

Wash the oranges or the lemons; remove the zest and make the juice. Keep aside.

Add the sifted flour with the baking powder, then slowly pour in the oil, the melted butter and the orange juice with the zest, mixing well.

Pour the batter into a buttered baking pan and place in the oven. Cook for 35 minutes.

as a decoration you can add on top of the cake candied slices of oranges and lemons.

Pears clafoutis

Ingredients:

1 can of Pears, or peaches or apricot

3 Eggs

300 ml milk

140 gr sugar

70 gr flour or any gluten free flour

200 ml whipping cream

20 gr butter

40 gr Brown sugar

1 tsp vanilla extract Optional

preparation:

Heat your oven at 180 degrees cel.

Remove the pears from the can, let them strain then cut into small cubes, keep aside.

Mix in a bowl the eggs, the milk, the sugar, the flour and the cream with a whisk.

Butter a mold and floured it, pour the preparation.

Add the pears on top of the preparation.

Add small pieces of butter and spread the brown sugar over it.

Put in the heated oven for 40 minutes min ,at 180 °.

Enjoy it warm or cold.

Healthy Apple muffin

Ingredients:

50 gr coconut sugar  or white sugar

100 gr brown sugar

4 eggs

240 gr of flour – or mix rice flour 150 gr and oat flour 90 gr

2 tsp baking powder

200 gr coconut oil or butter

200 ml of Rice milk or regular milk

2 apples cut in small cubes

2-3 pinches of cinnamon

Lemon zest from 1 lemon

Instructions:

Put in a bowl the 2 types of flour and the baking powder.

Add the butter at room temperature and mix it using a mixer, at medium speed.

Add the sugar and mix it again at medium speed.

Add the eggs one at a time, and whisk well after each egg.

Add the rice milk and whisk one last time.

Cut the apples in small dices, put cinnamon on it, mix well.

Pour half of the preparation into the paper molds, place apples in all the old and cover with the rest of the batter.

Spread a bit of cristal sugar with the lemon zest on top of each molds.

Bake for 20 mn at 180 degrees Celsius, check with a blade if dry.

Take out of the oven. Wait till it cools down. Enjoy your degustation!

Marble cake not to be missed!!

Ingredients

120 gr butter

120 gr Liquid fresh cream

200 gr cristal sugar

4 Eggs

220 grams Flour

1 pack Baking powder or 11 gr

100 gr Dark chocolate

1 teaspoon Vanilla flavor

Steps:

Mix together in that order:
butter, liquid cream, sugar

Add 4 eggs, the flour and the baking powder in the previous preparation for about 30 seconds.
Share the batter into 2 dishes.

Put 100 gr of dark chocolate in a glass bowl and melt it 30 seconds by 30 seconds till it melt entirely.Whisk every time.

Pour 1/3 of the vanilla batter into the bottom of the mold and level it to cover it,
Add half the chocolate batter on top, leave it as it is do not equalise.
Add 1/3 of the vanilla batter
Add the second half of the chocolate batter on top, do not equalise, it will have a wavy look
Add the rest of the vanilla mixture again.
Put in the oven for 60 min at 170 ° C.

Check the cake with a knife, which should come out dry if you plant it in.
Wait till it cools down 😃
