pizza dough- tomato sauce and cheese

pizza dough

Pizza ingredients


500 ml water

25 ml olive oil

12gr salt

750 gr flour

7 gr honey

2,5 gr dry yeast


Tomato sauce 700 gr

Mozzarella or shredded cheese ideally 200 gr for each pizza so 4X200 gr

This amount is for 4-5 pizza dough you can freeze it after as well

You can also buy anchovies, olives…whatever you like on your pizza !


Dissolve the water and the yeast for 3 min.

Separately, Put 500 gr of flour in a large bowl, make a hollow in the middle add the yeast water mixture, start mixing either by hand or with the hook of a mixer. Add salt and olive oil, then add the rest of the flour, mix for almost 10 minutes.

Form a ball and place in a floured container for 45 minutes to 1 hour until the dough doubles in size.


Cut into dough pieces of 250 gr. Either freeze or use to form the pizza.

Preheat the oven to 250 degrees

Put the tomato salt and pepper sauce cook for 15 minutes then add the mozzarella, olives, anchovies …

Cook another 5 min.

It is ready to be enjoyed add a few basil leaves before serving.

For a first trial I suggest to make half of this quantity.


* One cup of warm liquid milk and One cup and a half of warm water

* 1 table spoon instant yeast

* 1 table spoon sugar

* 1/2 tea spoon salt.  

*5 3/4 cup of multi-use flour.


Mix the dry ingredients,

Add milk and water,

Knead with your lovely hands until you get a soft dough.

Shape into ball and cover it for one hour.

Sprinkle the tray with flour and shape it to small balls.

Cover it again for 20 minutes.

In a bowl mix olive oil with dried thyme.

Flatten each ball to a circular shape.

Fry in a preheated dry pan fo 7 minutes and then flip it over, now put the olive oil mixture and keep it for another 5 minutes then remove it .

You can fold it in the last step to make a taco shape.

Bacon Cheese Pie by Oxana



400 g all purpose flour

9 g dry yeast 

3 tBsp olive oil 

1 tsp sugar



 200 g Mozzarella cheese 

90 g any bacon –

2 eggs –




Dissolve the yeast in 200 ml of warm water, add into itflour , top up with salt, sugar and olive oil and knead a dough.

Leave it to rise for 2 hours.  


Chop mozzarella, bacon, parsley and mix everything with 2 eggs. 

Divide the dough into two parts and cut 2 discs, one slightly wider than the other.  Arrange the larger disc of dough in a round pan, pour the filling in and cover everything with the second disc of dough.

Prick the top of the pie with a fork.  Bake at 180 ° C (30-40 minutes).   

Hint: you can combined all purpose with whole wheat flour (50/50) & extra (10-15 ml) water.  Buon appetito! Have a good day!

Chili con carne by Oxana


Two garlic cloves , minced

1 tbsp olive oil

1 onion , diced

1 red capsicum (bell pepper), diced

300g beef minced

3 tbsp tomato paste

1 can crushed tomato

1 can red kidney beans 

125 ml water

Salt and pepper


1 tsp cayenne pepper  

2 tsp paprika powder

2 tsp cumin powder

1 tsp oregano –

2-3 chili (optional) 

Preparation :

Heat the oil in a large skillet over medium high heat.

Add garlic and onion, cook for 1 minute, then add capsicum and cook for 2 minutes until onion is translucent.

Turn heat up to high and add the beef.

Cook, breaking it up as you go, until mostly browned.

Add Chili Spice Mix and the remaining ingredients with 1/2 cup of water for Quick Cook (20-40 mins).

Adjust salt and pepper to taste just before serving.  Serve over rice, or ladle into bowls with corn chips or warm tortillas on the side (always with sour cream, cheese and coriander).

This dish is awesome for the Sunday family lunch!

4 cups of flour

1 1/2cup warm water

 1 tsp salt


2 bunches of spinash, chopped

1 onion, finely chopped

1 tbsp olive oil

1/4 cup feta cheese, crumbled

1 pinch crushed pepper

salt and pepper, to taste


Mix the flour and the salt in a bowl, then gradually add the water, kneading until you have a dough. Turn the dough onto a lightly floured working surface and knead for 10 minutes. Cover with a damp cloth and let the dough rest like that for 15 minutes.

Divide the dough into small apple size pieces, then roll out each piece to a thin pastry.


Mix the spinach and onions with olive oil, and spices, add feta cheese. Arrange the filling in the middle then fold the two opposite sides.

Warm a non-stick pan over medium heat.

Place one gozleme in the pan and cook it until blistered with brown spots, then turn over, and brush with melted butter.

Once cooked on one side, flip it and brush the top with butter.

When cooked on the other side as well, brush that side with melted butter as well.

Cauliflower meatballs by Oxana


150 g cauliflower 

150 g potatoes

1 egg

2 tBsp parmesan 

6 tBsp breadcrumbs 

oil for frying



Peel & boil potatoes in water for about 20 mins.   

Divide the cauliflower into florets and boil it too (10 mins).

Mash both ingredients, adding the egg, grated Parmesan, 2 tBsp of breadcrumbs and salt. 

Form & roll them in the rest of the breadcrumbs and fry them in boiling oil.

They are ready!!

Dairy-Free Cashew cheese and quesadilla by Oxana

Cashew cheese


1/2 cup raw cashews  –

1/4 cup warm water  –

1 cup chopped cauliflower  –

1/4 onion  –

2 or 3 pinches of sea salt and black pepper  –

Cumin or thyme as per your taste


Soak cashew nuts in warm water for 1-4 hours unrefrigerated. 

Steam the cauliflower for 15 minutes. Transfer the cauliflower, cashew nuts, 1/4 cup warm water, onion, salt & pepper to a food processor and blend them until smooth.

If the cheese preparation is too thick, add water a tablespoon at a time until the desired consistency is reached.

Store in an airtight container in the fridge for up to 5 days.  

Hint: you can use the same recipe without the cauliflower.

Quesadilla :


3 cup flour (00) –

1 Tsp of salt –

1 Tsp of baking soda –

1/3 cup of sunflower or olive oil –

1 cup warm water 


Knead the dough and cover with kitchen towel for an hour. Roll a very thin flatbread & cook them on a flat pan without oil , ideally in a pancake pan. (About 6-8 Quesadillas)   Buon appetito and have a good day!


Vegetarian sushi cauliflower

250 gr Cauliflower
100 gr Cashew nuts
5 tablespoons nutritional yeast
1 pinch of salt
Carrots cut as for sushi long and lean parts
Cucumber same as for carrots
Thin chopped red bell pepper

Crush the cashew nuts
Make Cauliflower rice (using a mixer and drain it in a table cloth to
remove all the water)
Prepare the Nori leaf (algae ones) sheet
Put 80 grams of cauliflower rice and vegetables on the nori leaf, cashew nuts and roll it. Put a little bit of water to seal the sushi nori leaf.
Serve it with tamarind ,wasabi, ginger pickles and soy sauce.


Mushroom lasagna from Kiki

INGREDIENTS for 6 people
500 gr of lasagna
1 kg mushrooms (Paris)
1 liter of bechamel sauce
90 gr butter
90 gr of flour
1.2 liters of whole milk
1 pack of dehydrated mushrooms (200-250 gr)
1 glass of white wine
1 onion
1 bunch of parsley
200 gr of Parmesan cheese
300 gr grated emmenthal
Olive oil
Ground Nutmeg
Salt pepper
For the béchamel sauce:
Melt the butter on the heat, add the sifted flour out of the heat, mix well with a
whisk, add the warm milk while continuing to mix , putting it back on the fire.
When boiling, put out of the heat and continue mixing. Add a pinch of grated or
ground nutmeg. Set aside.
Preparation of the mushrooms:
In a large stove, put the olive oil (2 Table Spoon), the onion and make to blond.
Add the mushrooms, ½ glass of white wine. Cook 10 minutes over medium heat,
add a little water if the mushrooms are too dry while cooking.

Pour a little bechamel into the bottom of the dish, place the lasagnas flat, side by
side, pour a little bechamel to cover the lasagnas, put the mushrooms, the fresh
parsley chiseled and grated cheese.
Repeat the same assembly 2 more times.
To finish, put 4-5 pieces of butter on top of the dish and finish with a little

Italian meat balls


Tomato sauce:

700 gr tomato sauce

5 leaves sweet basil

1 tsp Salt

1 tbsp sugar


1 onion or celery

30 gr Olive Oil or sunflower oil

Meat balls:

400 gr beef (not ground)

2 slices square bread for toast

5 tbsp of milk

1 egg

50 gr flour




Frying Pan


A lid


Potato smasher (for the chick peas version only)


Tomato sauce preparation:

Slice the onions into small squares and fry them in Oil in a frying pan. Use a saucepan pour in the onions with the oil, add the tomato sauce add the salt and the sugar simmer, let cook for 20 minutes. Then add the basil leaves at the end.

Recipe of meatballs: take your beef, place in a blender mix it for 5-10 seconds.

Prepare your bread, cut away the crust, cut in small squares, add the milk just to make wet the bread, not much 2 tablespoon of milk should be enough.

Add an egg, salt and pepper.

Keep the meat preparation in the fridge for five to 10 minutes.

Take the meat out again, with the meat make small round balls 3 cm in diameter max.

Coated in flour. Prepare a hot frying pan with oil 3-4 tablespoon of oil. Start to grill the meatballs, they need to be colored on all sides. When all coloured, add them in the ready tomato sauce, add the basil leaves, keep boiling for 5 mn, your dish is ready!

You can serve it with rice, pasta, quinoa…Enjoy!!
